This cocktail is perfect for hot summer days and nights, it’s both
flavored and colored with beautiful seasonal bright red cherries.
It’s super refreshing, simple and a little sweet. This cocktail
works well as a party drink too, just double or triple the
quantities and make a big jug. Just don’t add the ice until the last
minute so it’s not too diluted or watery. The cherry brandy gives
it an extra punch, however if you don’t have the cherry brandy
the cocktail works well without too (you could replace it with a
little sour cherry juice) The key here is good ingredients, really
fresh ripe cherries and a high quality vodka. The good stuff.

For the Thyme Syrup-

½ Cup Sugar

½ Cup Water

15-20 Thyme Sprigs

Place sugar, water and thyme sprigs in a medium saucepan and
bring to a boil until sugar dissolves. Remove from heat and let
cool. Once cooled, strain and set aside.

For the Cherry Thyme Cocktail

20 Ripe Cherries, pitted

60ml Vodka

30ml Cherry Brandy

5 Tbsp Thyme Syrup½ Lemon, squeezed

Ginger Beer or Soda Water, to top up

2 Thyme sprigs, to decorate

2 Cherries, to decorate

Put the cherries, vodka, cherry brandy, thyme syrup and lemon juice
in your cocktail shaker. Muddle the cherries with a muddling spoon
until quite a bit of their juices have been extracted. Fill the shaker
with ice and shake for about 40 seconds. Fill two rock (whiskey)
glasses with ice and strain the cocktail over the ice dividing between
the glasses. Top up with ginger beer or soda. Place a cherry in each
glass and finish off with a sprig of thyme. Ready! Enjoy!
